FREEZING

Freezing is one of the oldest and most widely used methods of food preservation. With the proper control systems and techniques, it allows for the preservation of taste, texture and nutritional value.

The freezing process utilizes the beneficial effects of low temperatures where microorganisms cannot grow, chemical reactions are reduced, and cellular reactions are delayed.

As with all food preservation methods, proper freezing begins foremost by establishing that the food product is uniform, fresh, and clean before freezing. Optimal freezing methods vary with each food product.
