SHELF STABLE

In the food industry, a shelf stable food product is one that has been altered so that it can be safely stored in a sealed container at ambient temperature (or room temperature) for a usefully long shelf life.

Many preservation techniques are employed to extend a food's shelf life. Modifying the levels of available water and acidity in the food product and then sealing it in an airtight container with a hermetic seal can all extend a food's shelf life without unacceptably altering taste or texture.
